Today’s lunch was a simple noodle dish – Sesame Noodles with Tofu. I was basically scrounging up whatever veggies I had left in the fridge to make room for my new grocery delivery for tonight and this was what I came up with. I love that this recipe is so easy to change up and add whatever protein and veggies you want in it.
1 garlic, sliced into chunks
1/4 cup light and dark soy sauce (combined)
2 tablespoon sesame oil
1 teaspoon olive oil
1 cup of tofu
1 tablespoon white sesame
1 tablespoon thinly-sliced green onions
In a large pot of water, add salt and garlic, cook spaghetti according to instructions. Drain when ready and set aside.
Meanwhile, cut your tofu, carrots, and zucchini however you wish. I cut the tofu and carrots lengthwise to make nice long pieces and the zucchini width wise just for some variety.
Add olive oil and salt, and add tofu once the oil is thoroughly heated. Cook for a bit and then add the carrots zucchini. Add noodles and sesame seed. Add sesame oil, soy sauce mixture, and sesame seeds and mix well. Cook until done, then add the green onions, mix, then serve.
